I met Adam for the first time when he was the Head Chef at The Insólito, and I always appreciated his approach and way of thinking towards food. So when he left to open his own restaurant – Chimera – with Thomas Mancini, I continued following him on his kitchen journey and now that he launched the Chimera Brewpub in Alcântara was the right time to re-visit him again.
Besides Adam and his lovely wife, Raquel, I was greeted with… a pint (of course) and was indeed a bold welcoming!
Where is now Chimera Brewpub it used to be back in the days (1734) the mews of Necessidades Palace and even now you can still feel its royal charm. The rustic and vintage vibe meets perfectly the charming chandeliers.
Raquel played a huge role on the decor, bringing in both coziness and elegance. One can feel the attention paid to details such as a little couch with magazines at disposal while waiting for your turn to the bathroom or mini tampons and candies mixed in a jar.
Their approach to brewing is the same as a Chef to his dream cooking process – creative freedom turned into complex yet authentic and honest flavors. Each beer takes around 4 weeks to ferment and then 2 more to be naturally carbonated.
To go with the beer, you’ll find a menu with a New York deli concept including both small (during the happy hour) and larger portions. Thumbs up for the Pastrami sandwich! Their aim is to serve full meals for dinner yet at the same time be that cool place just to watch a football game while drinking a cold beer. Adam is also committed in working closely with the surrounding community and giving back as much as possible.
If after all this, you’re still more into wines, you’ll still find your place here since the production is being carried on by Herdade dos Outeiros Altos from Estremoz region. Chimera own red and white wines are already in the horizon.
Must confess that I’m not the biggest beer fan but I can definitely appreciate one when it’s genuinely flavored and remarkably memorable. Personally, beer reminds of one key thing: relaxed informality with loads of smiles and laughs or that perfect inner solo moment when after the first sip you really believe there’s nothing else you could be doing at that exact moment meaning that: life is good.
